Fountain Of Youth

I went to college planning to become a doctor. Although I was led in a different direction with my passion for business and food, I have always held an interest in health, nutrition and cures for diseases. After being in the restaurant business for a few years, I continued my learning in the field of health and science and began applying what I was learning from scientific studies to my business. This allowed two of my passions (great flavor and health) to join together to serve our guests.

This interest has led me to eliminate from our restaurants foods like trans fats, farmed salmon, aspartame, grain-fed beef, high fructose corn syrup, soy lecithin and other ingredients that many believe to be questionable as food items or because of adverse environmental effects—and often years before doing so was a common trend. The minute I discover something is controversially unhealthy, we take it off the menu and replace it with what we believe to be a more wholesome alternative. I by no means have all the answers, but I am passionate about good, wholesome food, and you have my word that everything on our menu is what we believe to be the best that nature has to offer.

I have always believed in the power of food. In its purest form, food is the abundance of healthy living and can always be delicious. Just because it’s good for you doesn’t mean it can’t taste amazing, too. I believe that good, wholesome food is the most important driver in the quest to live forever.

Wholesome doesn’t necessarily mean some kind of strange health food; it’s just food without additives, natural, the way it exists in, well, nature. You can combine so many wholesome ingredients to create flavors you never thought possible and feel good about what you’re putting in your body as well. Now, I’m not going to sit here and tell you everything on our menu is perfect for every person, but it is wholesome from the source and is only made with the best ingredients. After all, we need food for the body, mind and soul. That’s where treats like chocolate cake and ice cream come in.

The Quest For Perpetuity

I believe it is possible to live forever—well, almost forever. When I share this idea with friends, I do get some pretty strange looks. I can see their facial reactions that say, “Are you crazy?” But books like Fantastic Voyage: Live Long Enough to Live Forever—The Secret Behind Radical Life Extension by Ray Kurzweil, support my “crazy” theory.

Here’s my theory of Perpetuity.

My goal is to do everything in my power to stay healthy and vibrant until I am eighty-nine. I believe that if you eat well and take care of yourself, you can be the best version of yourself health-wise into your late eighties. As nature takes its toll on our aging bodies, new science developments help offset those natural tendencies of bones breaking down, muscles deteriorating, etc. But if you stay active and eat well, you can slow this process down on your own. If you slow it down just enough, the advances in medical science will deliver life-extending miracles.

When I reach the age of eighty-nine, I believe bio-technologies will deliver a mega-dose of anti-aging discoveries that will take me, fully healthy and vibrant, to the age of 129. As medical science continues to advance, I will comfortably be taken to the age of 199. At age 199, medical science will deliver the final coup de grâce that will take me to Perpetuity. I want you to join me. The key to my theory is to stay healthy for as long as you can while medical science brings cure after cure after cure. Eating at Duke’s won’t guarantee you a long life, but it will surely help to keep you in the game.
